Cocktail ParTEA: Blue Raspberry Collins

You may remember a weeks or so ago we posted the first in a series of recipes from our Cocktail ParTEa. Today we are sharing with you our Blue Raspberry Collins recipe made using Bluebird Tea Co’s magical Blue Raspberry tea. This blend of green tea, blue pea flowers and raspberry pieces  was originally a limited edition blend but was voted back and added to the permanent collection of blends. This tea is a beautiful deep blue and turns a beautiful hue of purple when lemon is added. Some people may say its chemistry, we call it magic!

This cocktail is very similar to a Raspberry Collins, usually made with gin, raspberries and tonic water however we have replaced the tonic water for Prosecco and infused the gin with…yep you guessed it – tea!

To make this you will need:

  • Gin
  • Blue Raspberry Tea
  • Prosecco
  • Raspberries
  • Ice
  • Garnish (foliage)


*Infuse your gin with the tea, we used 6 teaspoons of tea to 30cl of gin as we wanted the flavour to shine and infused this for over 24 hours.

Pour 25ml gin into a tumbler, add some raspberries and mint and muddle to release the flavours. Top up with prosecco and ice. Add an extra sprig of mint and a straw for good measure and enjoy!
