Arancini Balls

Vegan Arancini balls.

(K) Speaking to a friend recently about food and health I asked them if they had considered a plant based diet to see if it helped some ongoing health issues they have. Their response was ‘I couldn’t live on raw food, I need wholesome comforting meals’. I completely agree with them – I need warming, heavy comfort food too, and this is totally possible on a plant based diet, something a lot of people aren’t aware of. So to prove to this friend of mine that it is totally possible I am going to share with you over a series of posts some of my favourite meals made entirely from plant based products.

First up Arancini Balls.

Arancini Balls

This is a perfect way to use up left over risotto, the risotto I made simply by cooking down some onion, adding some garlic and cherry tomatoes. Then risotto rice, adding 1 litre of vegetable and herb stock gradually over roughly half an hour with some broccoli cooking down in the stock. I seasoned with salt and pepper and my husband threw in a load of chilli and chipotle Tabasco at some point whilst I wasn’t looking.

There is one comforting vegan meal for you right there! I always make too much and rejuvenate the leftovers by turning them into little delightful arancini balls. To do that is super easy…

Arancini Balls



  • Left Over Risotto
  • Flour
  • Panko Bread Crumbs
  • Dairy Free Milk (I used rice milk)


Arancini Balls


Step 1. Divide your left over risotto into evenly sized balls (or quenelle them to save getting your hands sticky)


Step 2. Roll your quenelles in the flour.


Step 3. Dunk your quenelles in the milk. OLYMPUS DIGITAL CAMERA


Step 4. Roll the quenelles in your panko bread crumbs.


Arancini BallsStep 5. Place on a baking tray, bake in an oven at 180 degrees celsius for 20 minutes.


Step 6. Serve however you fancy! I love these simply served on a bed or spinach or this time around I served them like giant croutons on the top of some homemade soup.
