Ten Days of Tea Shirt: Marshmallow

img_3415We were so excited to try Tea Shirt’s Marshmallow tea, after trying the blend featuring black, oolong and white tea, mini marshmallows, cocoa peel, hazelnut brittle, chocolate drops, pomegranate and marigold petals we knew we needed to make something special with it! The black tea adds a unique twist to a traditional cookie recipe and the other elements in the tea bring a purely indulgent depth to the cookies, pair these cookies with a warm cup of Marshmallow and a Tom Hiddleston movie for a totally indulgent evening!

Marshmallow Chocolate Cookies

  • Cold brew 4 teaspoons of Marshmallow tea in two tablespoons of water for the length of time indicated on the pouch
  • Once the tea has brewed add a further two tablespoons of cold water to prevent the brew becoming bitter, leave to brew overnight
  • Preheat oven to 180c
  • Grease two large baking trays
  • Cream together 225g dairy free margarine with 320g caster sugar until light and fluffy
  • Add one tsp vanilla paste
  • Strain and warm your cold brewed tea
  • In another bowl mix 3tsp egg replacement powder with the warmed tea until frothy
  • Sift 400g self raising flour
  • Add the flour, egg and tea mixture, 150g dark chocolate chunks to the sugar and butter mixture and combine until a dough forms
  • Roll into 12 balls and space evenly apart on the baking trays
  • Bake for about 16 minutes
  • Enjoy!
