As you may have guessed, we love tea and not just for drinking! Here is our tried and tested green tea sorbet recipe made with Bluebird Tea Company’s MojiTEA as it is one of our favourites. It is a blend of green tea, peppermint and lime which is refreshing and zingy, perfect for our sorbet.
3 Teaspoons loose leaf green tea of your choice
1 tablespoon fresh thyme
Steep your tea in 500mls of water overnight.
Dissolver 100g of sugar in 250ml of water in a saucepan over low heat and then bring to a boil. Take the saucepan off the heat adding the thyme and zest of two lemons, then chill in the fridge overnight.
Strain both the mixtures into a bowl, add fresh lemon juice to taste, we added 1 1/2 as we love lemon! Churn in an ice cream maker until frozen or pop in the freezer until harder around the edges, then put in a food processor and blitz until smooth, repeat this process twice then freeze until firm. This process prevents large ice crystals forming and makes your sorbet smoother. Take your sorbet out of the freezer and allow to soften in the fridge for 20 minutes prior to serving.
